Here's a recipe for Grenadian curried goat:

Ingredients:
2 pounds of goat meat, cut into chunks
2 tablespoons of curry powder
1 onion, finely chopped
4 cloves of garlic, minced
1 tablespoon of fresh ginger, grated
2 tablespoons of vegetable oil
2 tomatoes, chopped
2 cups of coconut milk
2 cups of water
2 sprigs of thyme
2 bay leaves
1 scotch bonnet pepper (optional, for heat)
Salt and pepper to taste
Instructions:
In a large bowl, combine the curry powder, salt, and pepper. Add the goat meat chunks and toss them until they are well coated with the curry mixture. Let it marinate for about 30 minutes to 1 hour.
Heat the vegetable oil in a large pot over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté until the onions are translucent and fragrant.
Add the marinated goat meat to the pot and brown it on all sides, stirring occasionally. This step helps to seal in the flavors.
Once the meat is browned, add the chopped tomatoes and cook for a few minutes until they soften.
Pour in the coconut milk and water. Stir well to combine all the ingredients. Add the thyme sprigs, bay leaves, and scotch bonnet pepper (if using).
Reduce the heat to low, cover the pot, and let it simmer for about 2 to 3 hours or until the goat meat is tender. Stir occasionally and add more water if needed to maintain a thick gravy consistency.
Taste and adjust the seasoning with salt and pepper according to your preference.
Once the meat is tender and the flavors have melded together, remove the thyme sprigs, bay leaves, and scotch bonnet pepper.
Serve the Grenadian curried goat hot with steamed rice, roti, or your preferred side dishes.
